Funfetti blondies
INGREDIENTS

100g butter, chopped

180g block white chocolate, chopped

2 tablespoons milk

2/3 cup caster sugar

2 eggs, lightly beaten

1 cup plain flour

3/4 cup self-raising flour

1/3 cup Dollar Sweets Bright sprinkles

100g white chocolate, cut into 1.5cm pieces, extra

1/4 cup Dollar Sweets Bright sprinkles, extra, to decorate
EQUIPMENT

18cm x 28cm rectangular slice pan
METHOD

Step 1Preheat oven to 180C/160C fan-forced. Grease an 18cm x 28cm rectangular slice pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.

Step 2Place butter, chocolate and milk in a saucepan over medium heat. Cook, stirring, for 5 minutes or until smooth. Set aside for 10 minutes to cool.

Step 3Stir in caster sugar, egg, plain flour and self-raising flour until well combined. Add sprinkles, stirring until just combined (see note). Spread 1/2 the mixture over base of prepared pan. Top with extra chocolate, pushing into mixture. Top with remaining mixture, spreading to level. Scatter with extra sprinkles.

Step 4Bake for 30 to 35 minutes or until golden and centre of blondie is just firm to touch. Cool completely in pan. Cut into squares. Serve.
